Rapeseed oil is said to be one of the most valuable edible fats. This is mainly due to a high content of unsaturated fatty acids (oleic, linoleic and linolenic acid) that comprise up to 90% of this oil. Both the composition of rapeseed oil and optimum ratio of these fatty acids are very beneficial and account for its health-promoting potential.
Due to a high content of unsatured fatty acids (PUFA), in particular n-6 and n-3 acids, rapeseed oil is used successfully in a daily diet. Among others, these acids influence beneficially the lipid profile (reduce total cholesterol and LDL cholesterol levels), blood pressure and hormonal balance, support a healthy nervous system and play a major role in the prophylaxis of diseases of affluence, such as hypertension, brain stroke and colon and breast cancer.
Apart from the content of unsaturated fatty acids, rapeseed oil is a source of, among others, tocopherols, carotenoids, phospholipids, phenolic compounds and plant sterols (phytosterols).
